Pesto

Ingredients

  • 2 cloves garlic
  • Salt
  • 90g leaves
  • 30g nuts
  • 45g grated parmesean like cheese
  • 175ml (132g) extra-virgin olive oil

Instructions

  1. Grind garlic and salt to a paste.
  2. Add nuts and continue grinding until a paste forms.
  3. Add greens, a handful at a time, and grind.
  4. Add cheese, drizzle in olive oil, working it into the pesto with the pestle until a creamy, emulsified, sauce forms.
