Pesto
Ingredients
- 2 cloves garlic
- Salt
- 90g leaves
- 30g nuts
- 45g grated parmesean like cheese
- 175ml (132g) extra-virgin olive oil
Instructions
- Grind garlic and salt to a paste.
- Add nuts and continue grinding until a paste forms.
- Add greens, a handful at a time, and grind.
- Add cheese, drizzle in olive oil, working it into the pesto with the pestle until a creamy, emulsified, sauce forms.
